I try and get to squires loft at least once a month for some scotch fillet therapy. Every meal I get there is as good as the last! The sauces are great if you are not a fan of the minimalist approach of just meat and mustard.
Given the great food and the relatively small dining area it is hard to get a table if you are being spontaneous, so book ahead. They have franchised the name and menu but beware the others aren't as good. If you cant get a booking at Squire in Toorak you can try The Grill Room, the best of the copies.
The Good:
Great meat, good matching wines, fantastic sauces most importantly, totally consistent!
The Bad:
Very busy, make sure you book or you wont get a table till after 830
